Kentucky Fried Jackfruit

A tasty favourite turned vegan!

Serves: 2
Time: 30 minutes


  • 500g of jackfruit
  • 30g of cajun spice
  • 10g of paprika
  • 10g of chilli powder
  • 6g of garlic powder
  • 4g of ginger
  • 1g of cracked black peppercorn
  • 250g of plain flour
  • 10g of bicarbonate of soda
  • 300ml of unsweetened soya milk
  • 8g of mixed herbs
  • 200g BBQ sauce


  • 1. Drain the jackfruit and place in a deep mixing bowl with half the cajun spice, all the other spices and cracked black pepper. Combine well, place on a baking tray and cook for 15-20 minutes at 180c
  • 2. In another bowl, create a batter by adding 100g of flour, the remainder of the cajun spice, bicarbonate of soda, soya milk and mixed herbs. Combine well.
  • 3. Once the jackfruit is cooked, allow to cool slightly.
  • 4. Then tumble in the remaining flour. Dip each piece in the batter and then deep fry or cook until they are golden and crunchy 
  • 5. Top them with a BBQ sauce
