Loaded jacket potato

An indulgent jacket potato favourite!

Serves: 4
Time: 1 hour and 30 minutes


  • 4 large jacket potatoes
  • 100ml of honey and mustard dressing
  • 200g of grated mozzarella and mild cheddar mix
  • 80g of streaky bacon
  • 8g of chives
  • 80g of sliced red onion
  • 25ml of pure olive oil


  • 1. Bake the jacket potato until soft and scoop out the inside into a bowl
  • 2. Mix the honey and mustard dressing, half the grated cheese, chives and cooked streaky bacon into the potato
  • 3. Heat the oil in a pan, then add the red onion and fry until soft. Allow to cool and add it to the mix
  • 4. Combine well
  • 5. Add the mixture back to the potato skins and then top it with the remaining cheese
  • 6. Bake at 180c for 10-12 minutes until golden brown
  • 7. Enjoy!
