Sesame tofu noodles

Time: 35 minutes

Difficulty: Easy

Ingredients:

  • 1 tbsp vegetable oil
  • 600g Amoy straight to wok noodles
  • 300g tofu drained and patted dry
  • 2 tbsp sesame seeds
  • 2 tsp honey
  • 1 bell pepper cut into thin strips
  • 2 tsp chopped garlic
  • 1.5 tbsp green curry paste
  • 30g coriander chopped
  • 100g sliced onions
  • 3 eggs

Method

  • 1. Add the veg oil to a hot wok on a high heat and add the tofu, garlic, and onions and flash fry for 3 minutes
  • 2. Add the peppers with half the sesame seeds and the honey, 1/2 the chopped coriander and move everything to one side of the pan.
  • 3. Crack in the three eggs and whisk them like a scrambled egg, then add the noodles, and the green curry paste, then stir everything together
  • 4. Serve topped with a sprinkle of the sesame seeds and remaining coriander.
