Christmas snowman mince pies

A fun and tasty Christmas treat!

24 individual pies
Time: 1 hour


  • 400g of mini marshmallows
  • 250ml of whipping cream
  • 175g of icing sugar
  • 200g of plain white flour
  • 100g of salted butter
  • 50g of caster sugar
  • 2 eggs
  • 400g of mincemeat
  • 200g of cherries 
  • 1 large orange


  • 1. For the marshmallow, place the mini marshmallows into a microwaveable bowl and heat on full power for 20 seconds or until melted. Make sure you don't burn them!
  • 2. Place the cream and 20g of icing sugar in a bowl and whip to soft peak - add the marshmallows and whip until it has doubled in size. Then place in a bowl, cover and chill
  • 3. For the pastry, rub butter into the flour until it resembles breadcrumbs. Mix in the caster sugar, add the egg and bind together into a soft paste. Wrap in clingfilm and chill for 30 minutes
  • 4. For the filling, mix the mincemeat with the halved cherries and the juice/zest of orange
  • 5. Roll the pastry to approximately 2-3mm thick. Cut out slightly larger bases than the tart tray holes - cut out small star shapes with the scraps to use as the tops
  • 6. Line the tray with the pastry and half fill with the mincemeat mixture. Top with the stars and then bake at 180c for 12 minutes or until the bases are cooker and browned underneath
  • 7. Allow to cool in the tin for 3 minutes then remove and place onto a wire rack to cool completely
  • 8. Stir the marshmallow mix to soften and smooth. Put it in a piping bag with a plain nozzle and pipe a snowman body and head onto each tart. Then put in the fridge to set
  • 9. Once set, with a black icing pen, pipe eyes, nose and mouth on each
  • 10. For the icing, sift the remaining icing sugar into a bowl and add enough egg white to the mix. Beat until thick and smooth. Split into 3 and colour each one red, green and blue
  • 11. Pipe the hats, scarves, and gloves with the colours and then dust with icing sugar to finish!
