Vegan peanut butter cookies

A vegan tasty treat!

Serves: 4
Time: 1 hour 10 minutes


  • 180g of dark chocolate callets
  • 130g of crunchy peanut butter
  • 55g of maple syrup
  • 1g of cooking salt
  • 115ml of unsweetened almond milk
  • 30g of dark soft brown sugar
  • 130g of plain flour


  • 1. Mix all the ingredients together in a bowl except the chocolate
  • 2. Once combined, add 150g of the chocolate mix through - reserve 30g for a nice garnish
  • 3. Form into a cylinder shape and wrap in greaseproof paper. Then place in the freezer for 30-40 minutes
  • 4. Cut even sized disks from the mixture and place onto an oven tray lined with greaseproof paper
  • 5. Top with a few of the leftover chocolate callets and bake for 15-17 minutes or until cooked. 
  • 6. Remove and then leave to cool before eating
